6-Ingredient Pumpkin Spice “Shortbread” Cookies (oil, butter, and refined sugar/artificial sweetener free)! Are you looking to use up leftover pumpkin? I’m not, and I actually have 4 cans of it waiting for me in my apartment for when I return after break. πŸ˜‚ But either way, these are great. 

Ingredients:
1.5 cups oat flour
1/2 tsp pumpkin pie spice
1/2 cup pumpkin purée (not pie filling)
1 egg
1/4 cup honey
2 tbs. almond butter

Method:
Preheat oven to 350 degrees Fahrenheit. Combine wet and dry ingredients separately, then slowly mix the wet ingredients into the dry. When combined, form the dough into grape-sized balls and press flat onto a baking sheet with non stick spray or parchment paper. Bake for about 10-12 minutes.

I’m proud to report that my not-so-baby brother was accepted Early Decision to study acting at NYU’s Tisch School of the Arts yesterday! We are so proud of him, so I made him a cake from scratch to celebrate.
